Straight from Venice: An alternative to the Bellini – Try the Rossini!

rossiniYes, I’ve been a lame person not posting blogs over the past two months. I’m guilty as charged! Mrs. Lamey Lamerson! But hopefully I can make it up to you by making some fabulous postings inspired by my recent trip to Italy. I will be posting those photos and notes soon in the Wanderlust section of my blog as soon as I wipe the cob-webs from it. >=}

In the meantime, let’s get our cocktail attire on!

While the Bellini is a famous Italian drink comprised of prosecco and peach puree – the Rossini is another Venetian staple that is very similar in nature in that it uses prosecco but with strawberries. ooooooooooooo. 🙂

Aptly named after the 19th century Italian opera composer, Gioachino Antonio Rossini, this is one of the most popular Bellini variants in Venice. Because it is red from the strawberries, I can easily see this becoming a popular drink in our household this Christmas season. 


 The Rossini

Ingredients! {makes 4 cocktails}
16 ounces fresh strawberries – halved
2 tablespoons sugar
1 bottle Prosecco – chilled

{Need a little more octane? Add a shot of Italian Strawberry Liquor such as Fragoli.}
What to do: 

1. Into a small bowl add strawberries and sugar. Cover. Allow to macerate for approximately 1 hour.
2. Place strawberries into blender {or use stick blender}. Puree.
3. Spoon 2-3 tablespoons of strawberry puree into each glass. Top off with Prosecco. Gently stir. Garnish with fresh strawberry if desired.
