Spiced Pistachios

I hope you love pistachios as much as I do because I am doing some serious chowing down right now! If it weren’t the middle of a work day I would be sipping some Riesling with these. Heaven!

I’ve had my eye on this recipe from Bon Appetit for some time and finally took the time to do it. What I didn’t expect was to have to modify the recipe while I was cooking. The original just didn’t have enough punch for me. I found myself frantically seasoning the pistachios about half-way through the 30 minute cook time. What can I say? I like flavor. LOL So here is my version of Spiced Pistachios.

Preheat oven to 350°.

Whisk 4 large egg whites, 1/2 cup sugar, 2 tsp. thyme, 2 tsp. ground allspice, 1tsp. ground ginger, 1 tsp. cayenne pepper, and 2 tsp. of garlic salt  in a medium bowl to blend.

Fold in 1 lb. unsalted, shelled raw natural pistachios.

Spread out on a rimmed baking sheet brushed with olive oil.

Bake, stirring every 10 minutes, until golden brown and beginning to crisp, 30–35 minutes.

Let cool on sheet on a wire rack (nuts will crisp as they cool). Salt to taste.
