As if ice cream weren’t sweet enough, I had to sweeten it up even more with a dark chocolate cherry port wine syrup.
I got the idea from Mary over at Agua Dulce Winery. When we were tasting and taking photos last weekend, there was a port on the menu. I’ve never been a fan of port wine because I’ve always been more of a Moscato drinker as far as dessert wines go. However once Terri had me eat a piece of chocolate and take a sip of Port at the same time, she rocked my world (as she usually does).
Mary had mentioned we should take a bottle and pour it straight up on top of ice cream. But nooooooo…I needed to add chocolate to the mix as any self respecting chocoholic would.
If you’re interested in doing the same, here’s a recipe that will hopefully delight your taste buds as much as it did ours.
*If you’re not familiar with Port wine at all, it is a dessert wine that comes from Portugal. Port wines are generally red and very, very sweet as they have high sugar and alcohol content. It is usually served at the end of a meal with either dessert or even cheese.
• 1/2 Cup Sugar
• 1/2 Cup Port Wine (your choice)
• 1/3 cup dark chocolate chips
• 3/4 cup of freshly sliced cherries
Simply place all ingredients into a sauce pan, Simmer and stir for 15-25 minutes depending on how thick you want your syrup to be (the longer you cook, the thicker it becomes). Let cool for a few minutes before you pour onto the ice cream.
Serves 3-4 bowls of ice cream. Garnish with extra chocolate chips and a fresh cherry.
